80% Plain dark chocolate bar

For this 80% bar we wanted to give fudge tasting note and we found this Nicaragua origin bean. We have given it a moderate roast and really like how the chocolate has come out. In a 80% bar, the sugar (20%) is at the right amount to complement the mask the bitterness and yet bring out the experience of having a dark chocolate.
