In chocolate making, for every batch of beans, there is a ideal ratio of bean to sugar where the nuances of the beans are perfectly highlighted and the chocolate tastes just perfect. We feel with this batch of beans from Philippines we have achieved a great balance at 75%. We feel we get a nice fruity flavour note in this recipe.
