90% Plain dark chocolate bar

If we have to create a 90% dark chocolate bar that is smooth and enjoyable, then the beans have to be top notch. The job does not end just by sourcing really good beans -  need to roast it perfectly to bring out a balanced flavour profile. This batch of beans is from a farm in Tanzania. We found this to be really creamy and rich. And in this batch of bars we did medium roast (every batch we experiment different roasts - so another time this chocolate would taste different).
